As the name suggests this is a sparkling wine whose fermentation in bottle is made by the yeast strain that initiated the alcoholic fermentation, unlike a Champagne or Crémant where we add yeast exogenously when bottling.
Grapes : Chenin
Vines : The natural sparkling is made from old vines of Chenin Montlouis sur Loire appellation. Planting density is 6500 vines per hectare.
Vinification : When the grapes are harvested, the alcohol content is around 12.5% /vol.
The must is fermented at low temperatures in stainless steel tanks. Then the wine is bottled while still at 14 grams of sugar. The foam is the stage during which the yeast of the grapes will continue to consume the residual sugar while releasing carbon dioxide.
The bottles then rest 28 months on lees, then they are muzzled and disgorged without adding liquor.
