Vinification : The grapes are destemmed before steeping. Winemaking is like Burgundy with daily pumping over and punching down. Aging is 1 year in oak barrels from Allier aged 3 wines. Food and wine : It will be appreciated with game in sauce or red meat.
Tasting notes : Nose of mature fruit, flavor slightly animal. The color is very strong. The palate is rich, silky tannins.
